Distillery Notes :
Highland Park, the most Northern of all Scottish distilleries dominates both the city of Kirkwall and the famous Scapa Flow. At the end of the 18th century, preacher Magnus Eunson who was a famous smuggler, is supposed to have distilled spirit on the place of the current distillery.
The current distillery was built in 1825 by Robert Borwick, but soon became the property of John Robertson. Later on the ownership of the distillery was shared between Borwick and Robertson. After the death of Robert Borwick, his son George became manager of the business until 1860.
Highland Park has been owned by different people since 1890 when James Grant, owner of The Glenlivet formed a partnership with William Stuart, owner of Miltonduff.
The production capacity was doubled in 1898, 10 years after the buying-up of William Stuarts shares by James Grant.
The owners, Highland Distillers group were acquired by Edrington Group in November 1999 for £ 601m.
Prestige Whisky Guide notes, courtesy of the Highland Park website :
First released in 1998, Highland Park 25 Years Old is a phenomenal whisky; it has a rich amber glow and an unmistakable taste of smokiness and heather honey with, as you would expect from Highland Park, a hint of peat.
The remarkable complexity of this whisky is due in part to the fact that half of it is matured in first fill Sherry casks. These are very expensive and generally used sparingly in the industry. However, they impart maximum flavour; Highland Park 25 Year Old proves it.
Tasting Notes, from the Highland Park Website :
Colour: Natural colour; dark red golden, clear and bright
Bouquet: Very rich, mature oak; chocolate; fudge
Palate: Full, rich burst of flavour; soft honey; nutty toffee
Finish: Rich, long and surprisingly sweet for its age
Add a drop of water to Highland Park 25 Year Old and enjoy an immense vanilla sensation with the characteristic honey sweetness developing into complex aromas of white chocolate, cinnamon, nuts and dark fruit. The finish is at once intensely sweet and gently smokey and goes on and on.
